Magdalenas #MuffinMonday

These citrusy, little, pop in your mouth muffins are a delightful addition to a Spring Brunch.  I grabbed a few and ate them while on my morning walk.  Perfect.....

Magdalenas are a Spanish Muffin flavored with Citrus and Olive Oil.  Use a fruity Olive Oil that is suitable for dipping bread into as it will lend a distinctictive flavor to the muffins.

Magdalenas

These citrusy, little, pop in your mouth muffins are a delightful addition to a Spring Brunch.
Prep time: 10 MinCook time: 8 MinTotal time: 18 Min

Ingredients

  • 3/4 c. flour
  • 1 t. baking powder
  • pinch of salt
  • 1 extra large egg
  • 7 T. sugar, divided
  • 2 T. olive oil
  • 2 T. whole milk
  • 1/2 T. lemon juice
  • orange zest, if desired

Instructions

  1. Whisk together the flour, baking soda and salt.
  2. In small bowl of stand mixer, fitted with the paddle attachment, mix the egg and 6 Tablespoons of the sugar on high speed until pale yellow and thickened. Reduce speed and stir in the lemon juice.
  3. Fold the flour into the egg mixture, just until combined.
  4. Divide the batter into 24 mini muffin cups that have been treated with baking spray.
  5. Toss the remaining Tablespoon of sugar with about a teaspoon of orange zest, if using. Sprinkle the tops of the muffins with sugar and bake in a preheated 450* oven for 6-10 minutes, until a toothpick inserted removes cleanly.
