Torijas with Orange Honey Syrup #SundayFunday

This Spanish Style French Toast is soaked in milk and cream flavored with orange and cinnamon, then dipped in egg and fried before being topped with an Orange Honey Syrup.  Perfect for Spring Brunch or as the start to your Cinco de Mayo Fiesta.

Torijas Collage

This dish adds a couple of steps to the French Toast that I usually make.  You start off by steeping milk and cream with orange peel and cinnamon stick.  Let it cool a bit and then pour it over thick slices of baguette and let it soak in.  Then you fry it in olive oil instead of butter as I usually would.  Meanwhile you make a simple syrup flavored with fresh squeezed orange juice and honey to pour over the Torijas before serving.

I used Cara Cara oranges for this dish.  I LOVE them but any oranges will do.  The recipe I am sharing makes 6 slices and can easily be doubled or trebled for feeding a crowd.  I would allow for 2-3 per person if it is the only entree and 1-2 per person if part of a buffet with additional entrees.

This Spanish Style French Toast is soaked in milk and cream flavored with orange and cinnamon, then dipped in egg and fried before being topped with an Orange Honey Syrup.

Ingredients

Torijas
  • 1 baguette, cut into 6 slices (1 1/2" thick)
  • 1/2 c. 2% milk
  • 1/2 c. heavy cream
  • 5 T. sugar
  • 1 strip orange peel
  • 1/2 cinnamon stick
  • small pinch of salt
  • 2 eggs
  • 2 egg yolks
  • olive oil for frying
Orange Honey Syrup
  • 1/2 c. sugar
  • 6 T. honey
  • juice of one orange
  • 1/4 c. water

Instructions

  1. Place the baguette slices onto a rimmed baking sheet. Set aside.
  2. Place the milk, cream, sugar, orange peel, cinnamon stick and salt into a small pot and bring to a low boil. Remove from heat and let cool slightly.
  3. Whisk together the eggs and yolk in a shallow bowl.
  4. Pour the milk mixture over the baguette slices and let soak for 5 minutes. Flip over and let soak until no liquid is left on baking pan, another couple of minutes.
  5. Coat the bottom of a skillet with olive oil and place over medium heat.
  6. Dip the baguette slices into the egg on each side and place into the skillet once the oil is shimmering.
  7. Cook until golden brown, 3-4 minutes, flip and cook the other side for a few minutes.
  8. Remove to a serving platter and drizzle with the Orange Honey Syrup.
Orange Honey Syrup
  1. Place the sugar, honey, water and half of the orange juice into a small skillet over med high heat.
  2. Bring to a boil, reduce heat to a simmer and cook until slightly thickened, about 10 minutes.
  3. Remove from heat and stir in remaining orange juice.
  4. Cool slightly before serving with Torijas
