Stacy is hosting this month and invited us to join her in celebrating Spring.  We have lots of holidays coming up, Cinco de Mayo, Mother's Day, Memorial Day and Brunch is the perfect way to celebrate.

Let's see what everyone brought to the party.......

This dish adds a couple of steps to the French Toast that I usually make.  You start off by steeping milk and cream with orange peel and cinnamon stick.  Let it cool a bit and then pour it over thick slices of baguette and let it soak in.  Then you fry it in olive oil instead of butter as I usually would.  Meanwhile you make a simple syrup flavored with fresh squeezed orange juice and honey to pour over the Torijas before serving.

I used Cara Cara oranges for this dish.  I LOVE them but any oranges will do.  The recipe I am sharing makes 6 slices and can easily be doubled or trebled for feeding a crowd.  I would allow for 2-3 per person if it is the only entree and 1-2 per person if part of a buffet with additional entrees.
