Magdalenas
These citrusy, little, pop in your mouth muffins are a delightful addition to a Spring Brunch.

Ingredients
- 3/4 c. flour
- 1 t. baking powder
- pinch of salt
- 1 extra large egg
- 7 T. sugar, divided
- 2 T. olive oil
- 2 T. whole milk
- 1/2 T. lemon juice
- orange zest, if desired
Instructions
- Whisk together the flour, baking soda and salt.
- In small bowl of stand mixer, fitted with the paddle attachment, mix the egg and 6 Tablespoons of the sugar on high speed until pale yellow and thickened. Reduce speed and stir in the lemon juice.
- Fold the flour into the egg mixture, just until combined.
- Divide the batter into 24 mini muffin cups that have been treated with baking spray.
- Toss the remaining Tablespoon of sugar with about a teaspoon of orange zest, if using. Sprinkle the tops of the muffins with sugar and bake in a preheated 450* oven for 6-10 minutes, until a toothpick inserted removes cleanly.
