Kachumbari #EattheWorld

This African Salad from the Repulic of the Congo is a wonderful addition to any meal that you are serving.  A mixture of red onions, tomatoes and avocados dressed simply in fresh lime and flavored with fresh cilantro.  What's not to love.

This is one of the salads I made as part of our Easter Buffet.  It accompanied the ham and lamb and was equally as good with both.

I adapted this recipe from one found at Curious Cuisiniere ran by Caroline who has gathered together a team of several bloggers who post recipes from all around the world.

Kachumbari (Tomato, Onion and Avocado Salad)

This African Salad from the Repulic of the Congo is a wonderful addition to any meal that you are serving. A mixture of red onions, tomatoes and avocados dressed simply in fresh lime and flavored with fresh cilantro.

Ingredients

  • 1/2 large red onion, diced
  • large pinch of salt
  • 8 Compari Tomatoes, diced
  • 1 jalapeno, seeded and minced
  • 2 avocados, pitted and diced
  • Juice of 1 lime
  • handful of fresh cilantro leaves, chopped

Instructions

  1. Place the diced onion in a bowl, sprinkle with salt and cover with water. Set aside while for about 10 minutes while you prepare the other vegetables.
  2. Drain the onions and mix together with the tomato and jalapeno.
  3. Gently toss the avocado with the lime juice and then add to the tomatoes along with the cilantro.
  4. Toss gently to combine and serve.
