Olivye (Ukrainian Potato Salad) and the Weekly Menu #MoviesandMunchies

We took a detour in Movies and Munchies this month and instead of watching a film we watched episodes of  Servant of the People starring President Zelensky before he was President of Ukraine and before the invasion.

I have watched several of the episodes and I can see why Zelensky caught the heart of his people and won the election.  I'm not sure that I would have voted for the man strictly based on his portrayal of a president but, luckily, for the Ukraine he was up to the job.
I look forward to watching more of the series but I won't have completed it by the time this month is over.  I was, however, inspired to make a Ukrainian Potato Salad as a nod to the series and in support of the People of Ukraine.

I found this recipe at Natasha's Kitchen.  It is a very hearty potato salad containing ham, carrots, peas and eggs along with the potatoes.  It is flavored with dill, scallions and pickles.  I adapted the recipe to my taste and kitchen, subbing dill relish instead of chopping pickles, Miracle Whip instead of Mayonnaise, and adjusting the amount of ingredients.  

I am not a big potato salad fan, however my family is and I served this up for family dinner one Sunday along with Chimi Burgers and a Quinoa Salad that I will be sharing with in later posts.  It was a huge hit and my husband, especially liked it saying it was one of the best potato salads he has had.

Tomorrow the Angel Face is spending the night and then on Sunday we are having a family dinner out by the pool with all the trimmings.  Memorial Day we are going to smoke some pork and have the neighbors over for pulled pork sandwiches.

I am including my Weekly Menu for Memorial Day Weekend and the remainder of the week.  However you spend your Memorial Day Weekend, I hope you have time to take a moment of quiet reflection remembering those who have sacrificed all for our Freedom and to say a prayer for the People of Ukraine for their safety, well being and freedom.

Olivye (Ukrainian Potato Salad

Potatoes, Carrots, Ham, Peas and Eggs combined in a dill dressing makes a hearty, delicious side to all your summer foods.
Prep time: 20 MinCook time: 15 MinInactive time: 30 MinTotal time: 1 H & 5 M

Ingredients

  • 1 (8 oz) pkg diced ham
  • 2 large russet potatoes, peeled and cut into small dice
  • 2 large carrots, peeled and cut into small dice
  • 1 (10 oz) pkg frozen peas, thawed
  • 4 hard boiled eggs
  • 1/4 c. dill relish
  • 3 scallions, white and light green parts, thinly sliced
  • 2-3 sprigs dill weed fronds, chopped
  • 3/4 c. Miracle Whip
  • salt and pepper, to taste

Instructions

  1. Place the diced carrots and potatoes into a pot and cover with water. Place over medium high heat and bring to a boil. Cook for 15 minutes, until fork tender. Drain and let cool to room temperature
  2. Peel the eggs, chopping 3 into small dice and slicing one for garnish. Set aside.
  3. In large bowl, whisk together the Miracle Whip, relish, scallion, dill, salt and pepper. Add the chopped egg, diced ham, potatoes and carrots to the bowl and fold in until covered in dressing. Gently fold in the peas.
  4. Transfer to a serving bowl and garnish with the egg slices. Serve immediately or refrigerate until ready to serve.
