- 3 T. soy sauce
- pinch of crushed red pepper
- 1T. ginger paste
- 6 boneless, skinless chicken thighs
- 1/2 red onion, cut into four slices
- 1 small lemon, sliced into half moons
- 2 t. butter
- 1 T. honey
- Whisk together the soy sauce, red pepper and ginger paste. Pour into an 8" square baking pan, add the chicken thighs and toss to coat with the marinade. Add the onion and lemon to the pan nestling between and around the chicken pieces.
- Place into a preheated 400* oven and bake for about half an hour, basting occasionally, until an internal temperature of 165-170 is reached. Remove chicken. lemon and onion to a platter and keep warm.
- Pour the juices in the baking pan into a small sauce pan and bring to a boil over med high heat. Stir in the butter and honey and cook for a couple of minutes until thickened.
- Pour over the chicken pieces and serve.
