Cucumber, Corn and Tomato Salad #BBQWeek

Today is the final day of BBQ Week.......
This has been such a fun event and so far I have shared three entrees with you starting with Beef Kafta followed by Asian Ribs and Korean Grilled Flank Steak.   I traveled the world virtually for this event and traveled physically to Mexico during this event but today is the last day of both BBQ Week and my vacation so it's back to the good ol' USA for my final recipe.

I love BBQ's but, for me, it's all about the sides....I love attend BBQ Potlucks and bringing sides that go great with whatever is on the grill and this salad fits the bill perfectly.  This salad can be made ahead of time and popped into the refrigerator until it is time to serve.  It has just the right amount of heat and sweet and is sure to be a big hit at your next get together.

Corn Tomato and Cucumber Salad

Corn Tomato and Cucumber Salad

This wonderful summer salad is a great side for your next BBQ. Sweet corn, grape tomatoes and cucumbers dressed in a garlicky vinaigrette with just a hint of heat and touch of sweet.
Prep time: 10 MinTotal time: 10 Min


  • 2 c. fresh or frozen and thawed corn kernels
  • 1 pint grape tomatoes, halved
  • 1 seedless cucumber, diced
  • 1/2 c. extra virgin olive oil
  • 1/2 c. red wine vinegar
  • 2 T. Honey Hype Spice
  • 1 T. Garlic Goodness Hot Sauce


  1. Place the olive oil, vinegar, spice mix and hot sauce into a jar, seal and shake until emulisified.
  2. Place the corn, cucumber and tomatoes into a bowl. Pour the dressing over and toss to coat. Refrigerate until ready to serve.
