Each month Nichole of Cookaholic Wife challenges us to share the best recipe we can using 2 ingredients that she chooses based on ideas presented from the rest of the group.  This month she asked us to share recipes containing Rum and Pineapple.

Cocktail Cookbook and Cocktails

When I think of Pineapple and Rum my mind immediately pictures cocktails.....don't judge me!!  I happen to love cocktails with rum and fruit juices. It always takes me back to the tropics, which takes me back to scuba diving, which is my happy place.

The problem is that I have already shared a Blue Hawaii, and a  Rum Punch so I needed to find a new recipe for a cocktail containing Pineapple and Rum.  The Ultimate Book of Cocktails to the rescue!!

I opened the book to the Rum section and perused while Frank threw some burgers on the grill.  I found this recipe for a Goldilocks, so named because of the color obtained when all the ingredients are mixed.

I drank half of my glass with my dinner and then took the remainder into the pool with me for a relaxing finish to a wonderful day.

Goldilocks Cocktail

Goldilocks Cocktail

A perfect blend of Rum, Pineapple and Orange this is a wonderful summer cocktail. Make up a pitcher to serve at your next outdoor gathering. Cheers.

Ingredients

  • 3 T. dark rum
  • 3 T.  Malibu rum
  • 1/2 c + 1 T. pineapple juice
  • 6 T. orange juice
  • ice

Instructions

  1. Fill 2 tall glasses with ice cubes.  
  2. Pour all ingredients into a cocktail shaker filled with ice cubes. Shake to chill and strain into the glasses.  Garnish with a pineapple slice, if desired.
