Salisbury Meatballs #FoodBloggerLove

Allison matched up each blogger with another and then sent us off to spend the month getting to know our partner (secretly of course) by following their blogs and showing them some love by commenting, sharing, pinning and encouraging.  I was thrilled to be assigned Dina of  Savvy in the Kitchen.  I immediately started following her posts on bloglovin and was thrilled with what I found.

Dina is the Mom of teenagers who owns a custom cake business in LA. She is very crafty and talented and she also hosts Bewitchin' Projects Block Party where others can link their diy projects and Tasty Tuesdays where other bloggers can link their recipes.

I found so many delicious recipes on Dina's site that I have tagged and pinned onto my boards that I didn't know where to start.  I finally decided that I wanted to do a main dish entree from her blog so when working on my Weekly Menu I bypassed all the amazing desserts and went straight to beef entrees.  I did this because I already had 2 chicken dishes and a meatless dish planned and wanted some red meat this week.

I came across this great recipe for Salsibury Steak Meatballs  that Dina had made for a guest post at Creative K Kids.    I haven't had Salisbury Steak since I was a kid but I remember loving them so  I knew that my Little Miss would love these.  I watch her 2 days a week while her Mama works so I planned it for a night when they would be joining us for dinner.

I adapted this recipe (mostly the gravy) because I had a half can of tomato sauce in the refrigerator that I needed to use up.  I also added a little more seasoning because we are garlic nuts in this house.

The meatballs were dense and hearty just like Salisbury Steak


Salisbury Steak Meatballs with Mushroom Gravy
adapted from Savvy in the Kitchen

Meatballs:

1 lb. ground beef
1/3 c. Italian style bread crumbs
salt and pepper to taste
1 t. garlic paste or minced garlic
2 T. Worcestershire sauce
1 t. parsley paste
1/2 of a small onion, finely diced
1 egg
1/4 c. beef broth
1 T. butter

Place all ingredients, except oil, together in a large bowl. Using clean hands, mix together thoroughly.  Shape into approx 2" meatballs.  Heat oil in a large deep skillet.  Brown the meatballs on all sides over med high heat.  Remove to a plate and set aside.

Gravy:

8 oz. mushrooms, sliced
salt and pepper to taste
2 c. beef broth
1 (8 oz) can tomato sauce
2 T. flour
1 t, wine vinegar
2 t. Worcestershire sauce

In same pan, saute mushrooms, seasoned with salt and pepper until tender, 2-3 minutes.  Add the remaining ingredients, stir and cook,bringing to a boil and scraping up any brown bits stuck to the bottom of the pan. Reduce heat, return meatballs to the sauce, cover and simmer for 20-30 minutes. When ready to serve you can thicken the gravy a bit if desired by mixing 1 T. cornstarch with a little broth or water.  Stir into the dish and allow to lightly boil until thickened.  Print Recipe
