Campbell's take me away.......

You know those nights when you think you are going to be home all alone because your husband is meeting with friends and having dinner out?  You curl up with a book and figure you will just have cereal for dinner....on the couch....with your book.  Then you find out that dinner wasn't part of the plan and he is coming home starving!


You run to the freezer to see what you have that can be made quickly and find a ham steak.  Cool, they defrost fast....hmmmmm I will grab this half bag of frozen peas too.



What's in the fridge? Great you have half an onion and half a bag of shredded Mexican cheese.  In the pantry you find a handful of egg noodles and good old reliable Campbell's  cream of mushroom soup. You are now golden!!



This, my friends, is everything you need for a quick, one pot meal that will feed the hungriest of husbands.


Ham and Noodles

1 ham steak, trimmed and cut into bite size pieces
1/2 small onion, diced
1 T. olive oil
3/4 c. frozen peas
1 can Cream of Mushroom Soup
1/2 soup can of water
1 c. shredded cheese (I used Mexican Blend)
1 1/2 c. wide egg noodles, cooked per package directions
pepper to taste

Heat olive oil in a large saucepot.  Add the onions and ham and cook until onions are translucent. Add the peas and cook until defrosted and warmed through.  Add the soup, fill the soup can with water and use it to wash the remaining soup from the sides of the can, and add this as well.  Stir to blend, then add the cheese.  Cook and stir until mixture comes to a boil and cheese is melted.  Add the noodles. Season generously with freshly ground pepper.  Print Recipe
