Chicken Tinga Tacos #SundayFunday

  Tinga is a smoky sauce made of tomatoes, onions, and chipotle peppers.  These tacos are made with chicken baked in this sauce, then shredded and placed into a corn tortilla before being topped with Mexican cheese.

I finished the 11th book of the Gamache Series, The Nature of the Beast. This novel inspired me to create this fun, seasonal salsa featuring apples and avocados.

This delicious meatless dinner is as easy as pie.  Cherry tomatoes tossed in olive oil and seasonings are combined with two different cheeses before being placed into a pie shell for baking.

Home Sweet Home and the Weekly Menu

Amy and I returned home early afternoon on Thursday from our Hiking Adventure in Shenandoah National Park.  It was challenging, fun, and satisfying.  The REI guides were amazing.  The trip was planned perfectly.  The food was scrumptious at each place we ate.  The accommodations at our hotel and lodge were perfect.
