My blogging friends and I get together every other Wednesday to share recipes that start or feature ingredients as we work our way through the alphabet. Let's take a look at the other Q recipes being shared today........

Life doesn't get much easier than an impossible quiche.  Place your vegetables into a baking dish treated with cooking spray.  Add cheese and meat, if using, then pour the egg mixture over and bake until puffy and golden brown.

Fresh Corn Quiche

Fresh Corn Quiche

Fresh Corn Quiche with Pancetta and Jalapenos, topped with Cheese and a smooth Custard that magically creates its own crust.

Ingredients

  • Kernels from 2 ears of corn
  • 1 jalapeno, seeded and minced
  • 1 c. shredded Colby Jack cheese
  • 8 oz. diced pancetta
  • salt and pepper to taste
  • 4 eggs
  • 2 c. milk
  • 1 c. baking mix (like Bisquick or Jiffy)

Instructions

  1. Cook the pancetta in a skillet until crisp, remove with a slotted spoon and set aside to cool.
  2. Spray a pie pan with cooking spray. Scatter the corn and jalapeños over the bottom. Season with salt and pepper, keeping in mind that the pancetta will add saltiness.
  3. Sprinkle the cheese over the vegetables and scatter the pancetta on top.
  4. Place the eggs, milk, and baking mix into a blender and puree until smooth. Pour the mixture into the pie pan and bake in a preheated 400* oven for 30-40 minutes, until puffed, golden brown, and a knife inserted in the center comes out clean.
