Apple Crumble Muffins and the Weekly Menu #FallFlavors

These delicious, tender muffins are perfect for breakfast at home, as a grab-and-go meal on your way out the door, or as a snack in your lunchbox.  Studded with fresh apples and covered in a cinnamon crumble, you might want to grab two.

I hope you have enjoyed all the Fall Flavor recipes our group shared this week.  I can't wait to try some of them.  It will have to wait until next month, though, because we are very busy here and then leaving for vacation in Cabo San Lucas.

Tonight we are celebrating the Angel Face's 12th Birthday at a Sushi Restaurant.  Her birthday is actually tomorrow; however, my nephew is getting married tomorrow, so we are celebrating a day early.  My brother. Larry and his wife, Mary, are in from California for the wedding and staying with us for a few weeks, even though we will be gone for 1 of the weeks they are here. 

On Sunday, Frank, my brother, and John are going to a Chicago Tribute Band Concert.  They will have Sunday Supper with us here before they leave.  

Larry shares a birthday with the Angel Face, so we'll celebrate on Monday by going to one of our favorite restaurants, which is opening a new store and hosting a preview dinner of its offerings.  

Thursday, we are meeting the Bonacorsis and Luths for dinner before they head to a hotel near the airport, as we have an early flight out on Friday.  We are hoping Larry and Mary will want to join us for dinner. We have season tickets for Broadway in Detroit, and the first play is on Thursday, so we will attend that and head to the airport hotel following The Notebook.

Apple Crumble Muffins

Apple Crumble Muffins

These delicious, tender muffins are perfect for breakfast at home, as a grab-and-go meal on your way out the door, or as a snack in your lunchbox. Studded with fresh apples and covered in a cinnamon crumble, you might want to grab two.

Ingredients

  • 1 1/2 c. flour, divided
  • 2 t. ground cinnamon, divided
  • 1/2 t. baking powder
  • 1/4 t. baking soda
  • pinch of salt
  • 1 stick butter, rmelted and cooled, divided
  • 1/4 c brown sugar, packed, divided
  • 1/4 c. sugar, divided
  • 1 egg
  • 1/2 t. vanilla
  • 1/2 c. milk
  • 1 apple, peeled, cored and finely chopped

Instructions

  1. Whisk together 1 cup of the flour, 1 teaspoon of the cinnamon, baking powder, baking soda, and a pinch of salt in a large bowl. Make a well in the center.
  2. Whisk together the 1/4 cup melted butter, 2 Tablespoons brown sugar, 2 Tablespoons granulated sugar, the egg, and the vanilla. Pour into the well in the dry ingredients and mix until just combined.
  3. Divide the batter among 9 muffin cups treated with baking spray.
  4. Combine the remaining butter, sugars, cinnamon and flour to make large crumbs. Sprinkle over the muffins and bake in a preheated 350* oven for 20 minutes or until a skewer inserted in the center of a muffin comes out cleanly.
