Apple Crumble Muffins
These delicious, tender muffins are perfect for breakfast at home, as a grab-and-go meal on your way out the door, or as a snack in your lunchbox. Studded with fresh apples and covered in a cinnamon crumble, you might want to grab two.
Ingredients
- 1 1/2 c. flour, divided
- 2 t. ground cinnamon, divided
- 1/2 t. baking powder
- 1/4 t. baking soda
- pinch of salt
- 1 stick butter, rmelted and cooled, divided
- 1/4 c brown sugar, packed, divided
- 1/4 c. sugar, divided
- 1 egg
- 1/2 t. vanilla
- 1/2 c. milk
- 1 apple, peeled, cored and finely chopped
Instructions
- Whisk together 1 cup of the flour, 1 teaspoon of the cinnamon, baking powder, baking soda, and a pinch of salt in a large bowl. Make a well in the center.
- Whisk together the 1/4 cup melted butter, 2 Tablespoons brown sugar, 2 Tablespoons granulated sugar, the egg, and the vanilla. Pour into the well in the dry ingredients and mix until just combined.
- Divide the batter among 9 muffin cups treated with baking spray.
- Combine the remaining butter, sugars, cinnamon and flour to make large crumbs. Sprinkle over the muffins and bake in a preheated 350* oven for 20 minutes or until a skewer inserted in the center of a muffin comes out cleanly.
