I was planning dinner one night and pulled out some pork chops. I love apples with pork and I also love cornbread with pork. I decided to combine these two favorites into one savory side dish.

I tried to make a small batch of only 6 muffins. There was probably enough batter for 8 or 9, so I overfilled the muffin tins resulting in muffins that rose unevenly. They still tasted delicious but to ensure your muffins are more attractive I have written this recipe to make 9 servings.

Apple Corn Muffins
Savory Corn Muffins studded with bits of fresh apple. These muffins were perfect with pan-fried pork chops topped with sauteed apples.

Ingredients
- 1/2 c. cornmeal
- 1/3 c. flour
- 3 T. brown sugar
- 1 t. baking powder
- pinch of salt
- 1/4 t. cinnamon
- 1/8 t. nutmeg
- 1 egg
- 1/2 c. milk
- 1 T. vegetable oil
- 1/2 c. chopped apple (l left the skin on)
- 1/4 t. vanilla
Instructions
- Whisk together the cornmeal, flour, brown sugar, baking powder, salt, cinnamon, and nutmeg. Make a well in the center.
- Whisk together the egg, milk, oil, and vanilla. Pour into the well and mix just until combined. Fold in the apples.
- Divide between muffin cups, filling 2/3 full, that have been treated with baking spray.
- Bake in a preheated 425* oven for 15 minutes.
