U is for Upside Down Cake

All the flavor you love in a Black Forest Cake without all the fuss and muss.  This semi-homemade cake is made with canned cherry pie filling, a cream cheese layer, and a boxed cake mix baked up in a cast-iron skillet.

Black Forest Upside Down Cake

I had my first taste of a Black Forest Cake as a young bride from a bakery in our neighborhood.  I fell in love with that chocolate, cherry-filled creation that didn't have frosting but was covered in whipped cream with chocolate shavings.

When I saw this recipe in an issue of Taste of Home, it brought back all those sweet memories.  This version has a cream cheese layer and is baked in a cast-iron skillet....how easy is that?

Black Forest Upside Down Cake

All the flavor you love in a Black Forest Cake without all the fuss and muss. This semi-homemade cake is made with canned cherry pie filling, a cream cheese layer, and a boxed cake mix baked up in a cast-iron skillet.

Ingredients

  • 1 can (21 oz) cherry pie filling
  • 8 oz. cream cheese, room temperature
  • 3/4 c. sugar
  • 2 T. flour
  • 1 t. vanilla
  • 2 eggs
  • 1 pkg. devil's food cake (plus ingredients listed on box)
  • Whipped Cream

Instructions

  1. Spread the cherry pie filling into a 12" cast iron skillet.
  2. Beat together the cream cheese, sugar, flour, and vanilla until creamy. Add the eggs and beat until incorporated. Spread over the pie filling.
  3. Prepare the cake mix, per package directions. Pour over the cream cheese layer.
  4. Bake in a preheated 350* oven for 50-60 minutes, until a skewer inserted in the center removes cleanly. Cool in pan for 10 minutes before turning onto a cake platter.
  5. Let cool completely. Serve each slice with a generous dollop of whipped cream.
