Leftover Kabob Fajitas
Wondering what to do with those leftover kabobs in your refrigerator? Remove the skewer, slice the meats and veggies, and pop them into your crockpot with some fajita seasoning. One leftover kabob suddenly feeds a family of four. How wonderful is that?!
Ingredients
- One cooked leftover Beef or Chicken Kabob
- 2 t. Fajita Seasoning
- 1/4 c. water
- Warmed tortillas
- Sour Cream and Salsa, if desired
Instructions
- Remove the meat and vegetables from the skewer and cut into slices.
- Place into the crock of a slow cooker and season with the Fajita seasoning.
- Add 1/4 c. water and cook on low heat for 4 hours.
- Serve on warmed tortillas.
- Garnish with sour cream and/or salsa, if desired

I don't make kabobs very often but I have leftover roasts, chicken, etc. which I think would work for this as well. Making a mental note for next time!
