These savory scones are a great grab-and-go breakfast for those busy days and a perfect treat on those lazy mornings when you can enjoy them with a hot cup of coffee and a glass of freshly squeezed orange juice.
Our daughter, Nicole, was telling us about a cheese that she had sampled at Whole Foods and liked so much that she bought some. She shared it with her husband, Pierre, and Frank's sister Roz, both of whom thought it was delicious as well.
The next time I visited the cheese counter at my international market, I found the cheese, a Cotswold from the UK. It is a double Gloucester cheese that is blended with chopped onions and chives. They were right....It is delicious.
I was listening to a fun little novel, The Ex-Girlfriend Murder Club, by Gloria Chao. This novel, about 3 women who had been dating the same man exclusively (they thought), discover each other when one of them thinks she is getting proposed to when he is actually proposing to the second.
These 2 get together and decide to go to a B&B that had been booked as a getaway for the first girl (Kat) and the cad. When girlfriend #2, Olivia, and she arrive at the B&B, they discover the cad, Tucker, there with another woman, Elle!!!
The three of them get together to seek revenge...much of their plotting takes place in coffee/boba tea shops, which made me think of scones. Scones made me think of the Cotswald Cheese and how wonderful it would be in scones.
If you can find Cotswald Cheese for this recipe, please use it. It really adds a wonderful flavor to these scones. But, if not, you can use any sharp Cheddar, with good results.

Bacon and Cheese Scones
These savory scones are a great grab-and-go breakfast for those busy days and a perfect treat on those lazy mornings when you can enjoy them with a hot cup of coffee and a glass of freshly squeezed orange juice.

Ingredients
2 c. all-purpose flour
1 c. white whole wheat flour
1 stick cold butter, cut into 12 pieces
1 T. baking powder
salt and pepper, to taste
1 1/2 c. shredded Cotswald cheese (or cheese of choice)
1 c. crumbled bacon
1 1/2 c. light cream
1 egg + 1 T. water
Instructions
Place the flours, butter, baking powder, salt, and pepper into the bowl of a food processor and pulse 4-5 times until butter is cut into the flour.
Add the cheese, bacon, and cream. Pulse 2-3 times just until a dough is formed.
Turn out onto a floured surface and shape into a 1" thick round. Cut the round into 8 pie-shaped wedges and place onto a baking sheet lined with parchment or a silicone mat.
Whisk together the egg and water. Brush onto the wedges and bake in a preheated 400* oven for 20-30 minutes, until puffed and golden brown.
