Prep time: 15 MinCook time: 30 MinTotal time: 45 Min
Ingredients
- 1 lb. ground venison
- one onion, chopped
- 1 pkg. frozen mixed vegetables, thawed and drained
- 1/2 t. cumin
- 1/2 t. paprika
- 1/2 t. oregano
- 1 T. Worcestershire sauce
- 1 pkg. (2 lb) frozen tater tots
- 2 c. Mexican Blend Cheese
- 1/4 c. butter
- 1/4 c. flour
- salt and pepper, to taste
- 2 c. beef broth
Instructions
- Place the venison and onion in a cast-iron or oven-safe skillet. Season with the cumin, paprika and oregano and cook until no longer pink.
- Stir in the vegetables, 1 cup of the cheese, and Worcestershire sauce.
- Top with the tater tots and sprinkle with remaining cheese. Bake in a preheated 375* oven for 20-30 minutes, until tater tots are crispy brown and cheese is melted.
- While the casserole is baking, melt the butter in a skillet over medium-high heat. Add the flour, season with salt and pepper.
- Cook, stirring until browned and nutty-smelling. Whisk in the broth until smooth. Cook and stir until the gravy reaches the desired consistency, adding more broth if needed.
- Serve the casserole right from the skillet, allowing people to add gravy as desired.
