These muffins have brightness from the lemon, spice from the ginger, and texture from the poppyseeds. They are a wonderful way to start your day or to enjoy as a snack throughout the day.
This recipe is adapted from one that my friend Sue of Palatable Pastime shared for Muffin Monday in 2018. Thanks, Sue, they were delicious.

Gingered Lemon Poppyseed Muffins
Crystallized ginger, lemon, and poppyseeds give these muffins a unique and delicious flavor.
Prep time: 10 MinCook time: 20 MinTotal time: 30 Min
Ingredients
- 2 1/4 c. flour
- 1/2 c. sugar
- 2 1/2 t. baking powder
- pinch of salt
- 1/2 t. ground ginger
- 1 c. milk
- 2 eggs
- 1/3 c. butter, melted and cooled
- 1/4 c. chopped crystallized ginger
- 1 1/4 t. lemon extract paste
- 1 t. vanilla
- zest and juice of one lemon
Instructions
- Place flour, sugar, baking powder, salt, and ground ginger into a large bowl. Stir with a whisk to combine. Make a well in the center.
- Whisk together the milk, eggs, butter, crystallized ginger, lemon extract, vanilla, lemon juice, and lemon zest. Pour into the well of dry ingredients and stir just until combined.
- Divide between 12 muffin cups that have been treated with baking spray.
- Bake in a preheated 400* oven for 20 minutes, until a skewer inserted in the center removes cleanly.

DeleteCandied ginger is one of my all time favorite ingredients. Their hardest part is not eating it out of the bottle! These sound delicious.
