We are overloaded with cucumbers every year. We eat them nearly every day in dishes like this Cucumber Cashew Salad, Polish Dill Pickles, and my Pop's Refrigerator Pickles.
This delicious, creamy salad paired perfectly with Grilled Tandoori Chicken. It is made with yogurt and flavored with lemon, mint, and cumin for a fresh, light side-dish for whatever you are serving.

Indian Cucumber Salad
This cucumber salad gets a makeover by adding the warm, fragrant flavors of India. You will love it!!

Ingredients
- 3 cucumbers
- 1 c. plain low-fat yogurt
- juice of 1 lemon
- large pin of sugar
- 1/2 t. ground cumin
- fresh mint leaves, chopped
Instructions
- Peel, or scrub the cucumbers if leaving the skin intact. Cut each cucumber in half and remove the seeds with a spoon if not using seedless. Cut the cucumbers into bite-size dice and place into a bowl.
- Whisk together the yogurt, lemon juice, sugar, cumin, and mint. Pour over the cucumbers and toss to coat.
- Serve immediately or refrigerate until ready to serve.

Wendy, I love the Indian flavor twist on your salad! While I'm not overwhelmed with cucumbers, this is a great excuse to go buy some! Can't wait to try!
ReplyDeleteI just told myself that I didn't need to go to the farmer's market tomorrow...but I guess now I need to go...because I have zero cucumbers. And now, I really want to make this salad!!! YUM!!!
