Ham and Cheese PinWheels and the Weekly Menu

These fun and easy Pinwheels or Rollups are easy and delicious.  I served them up as an appetizer, but they are also perfect for packing to take on a picnic or in your lunchbox.

Ham and Cheese Pinwheels

These little treats come together so easily.  I used garden vegetable cream cheese in a tub. You can use any flavored (or not) cream cheese that you like.  I like the kind that comes in the tub because it is easy to spread without having to be at room temperature.

This was one of the appetizers I brought to our Dive Gathering in Tobermory.  They were very popular.  I loved them because they were so easy to assemble while camping.

Today, my niece is having a family gathering.  I'm looking forward to seeing everyone.  Tomorrow is my birthday.  I'm having Frank take me out for dinner.  Sunday, I am attending a baby shower for my friend, Karen's daughter.

And then I'm getting back on track.  I haven't been to my exercise classes in a couple of weeks.  I have only walked or biked a couple of times.  Mostly,  I've been lying in the pool, eating, and drinking.  This week's menu focuses on eating a little more healthily.  Protein Drinks for breakfast and Salads for lunch.  I only have 3 weeks before Italy!!!!

Ham and Cheese Pinwheels

These fun and easy Pinwheels or Rollups are easy and delicious. I served them up as an appetizer, but they are also perfect for packing to take on a picnic or in your lunchbox.

Ingredients

  • 1 (8 oz) tub Vegetable Cream Cheese
  • 1 c. shredded Mexican Blend Cheese
  • 4 large Tortillas
  • 8 slices Deli Ham

Instructions

  1. Spread 1/4 of the cream cheese onto each tortilla, all the way to the edges.
  2. Sprinkle with 1/4 cup of the cheese. Lay 2 slices of ham onto each and roll up into a cylinder.
  3. Cut the ends off of each roll-up and eat them. Then cut each into 6 equal portions. Arrange flat on a tray, for serving.
