Ražnjići (Grilled Meat Skewers)
Almost every culture serves meat cooked on skewers. They come by many different names. In Montenegro, they are called Ražnjići and can be made with many proteins. I used pork in my version. They were scrumptious.
Ingredients
- 1 pork tenderloin, trimmed and cut into1" cubes
- 3 cloves garlic, minced
- 1/4 c. olive oil
- juice of 1/2 lemon
- 1/2 T. paprika
- salt and pepper, to taste
- 1 onion, cut into chunks
Instructions
- Place the oil, garlic, lemon juice, paprika, salt, and pepper in a sealable plastic bag. Seal and shake to combine.
- Add the pork, seal the bag, removing the air, and massage the pork with the marinade. Place in the refrigerator for at least 2 hours and up to overnight.
- Heat a grill to medium-high. Alternate the pork pieces with the onion, threading them onto skewers. Place on the grill and cook for about 5 minutes per side, until desired level of doneness.
- You can make one skewer per person or remove the meat from the skewers to a platter before serving.
