Gingered Lemon Poppyseed Muffins Pin

These muffins have brightness from the lemon, spice from the ginger, and texture from the poppyseeds.  They are a wonderful way to start your day or to enjoy as a snack throughout the day.

This recipe is adapted from one that my friend Sue of Palatable Pastime shared for Muffin Monday in 2018.  Thanks, Sue, they were delicious.

  3. Candied ginger is one of my all time favorite ingredients. Their hardest part is not eating it out of the bottle! These sound delicious.
