Chicken Fajita Foil Packets #SundayFunday

All the delicious ingredients of Chicken Fajitas, wrapped up in foil, and cooked on the grill for an easy, fuss-free, mess-free dinner, perfect for Eating Outside.

I wrapped mine up like a burrito, so I didn't even need silverware!!  The Sunday Funday Bloggers are Eating Outside today....

Camilla of Culinary Cam invited us all to join her in celebrating Eat Outside Day.  We eat outside a lot during the warm months.  Casual food, Good Friends, Lots of Laughs....now if we could just get rid of the mosquitoes!!



Chicken Fajita Packets

Life doesn't get much easier than this.  Peppers, onions, and chicken are piled onto a double-strength sheet of aluminum foil, sprinkled with seasonings, topped with butter, and folded into a packet.  Twenty minutes on a hot grill, and dinner is served.

You can serve these packets individually, one per person, or empty them all onto a big platter and set it in the center of the table for folks to help themselves.

I kept mine simple; some warmed tortillas and a bowl of sour cream were the only other items on the table, but you can dress this up by including shredded cheese, slices of avocado, and some salsa.

Chicken Fajita Foil Packets

All the delicious ingredients of Chicken Fajitas, wrapped up in foil, and cooked on the grill for an easy, fuss-free, mess-free dinner, perfect when camping or having a casual meal on the deck.

Ingredients

  • 1 T. chili powder
  • 2 t. paprika
  • large pinch of kosher salt
  • 1 t. oregano
  • 1 t. garlic powder
  • large pinch of sugar
  • 1 t. cumin
  • 4 redskin potatoes, cut into bite-sized chunks
  • 2-3 bell peppers, assorted colors, seeded, cored, and sliced
  • 1/2 Vidalia onion, sliced
  • 8 boneless, skinless chicken thighs, cut into bite-sized chunks
  • 4 T. butter, divided

Instructions

  1. Combine the chili powder, paprika, salt, oregano, garlic powder, sugar, and cumin in a large bowl. Set aside.
  2. Lay 4 sheets (approx. 12x16") of heavy-duty foil on the counter. If you don't have heavy-duty foil, double 8 sheets on top of each other to make 4 piles. Treat each sheet with cooking spray.
  3. Divide the potatoes, onions, and peppers between the 4 sheets, and sprinkle with a little of the combined seasonings.
  4. Place the chicken into the bowl and toss to coat with the seasonings. Divide the seasoned chicken between the 4 sheets of foil, placing it on top of the vegetables.
  5. Add a pat of butter onto each and fold the foil into packets, crimping the edges to seal.
  6. Place onto a grill heated to medium-high heat and cook for about 10 minutes, flip the packets over and cook 10 minutes longer.

  1. Perfect for taking to the park where you can just throw it on a Hot Grill and not worry about if it's not very clean cuz of the foil very easy.

  3. We love making these when we go camping. Easy to prep ahead and then throw into the fire when it's ready. Loving the uniqueness of your flavors.
