Smoked Salmon Dip and a Book Review #SundayFunday

I love serving brunch buffets when celebrating with a large group of people.  I like having an assortment of dishes to offer my guests.  This smoked salmon dip is a perfect addition to the buffet.

April is National Brunch Month.  I personally love Brunch, that cross between breakfast and lunch, serving an assortment of dishes that can be eaten leisurely between the hours of 9 am and 2 pm.

Canned Smoked Salmon Dip


My sister-in-law gifted me a can of smoked salmon bought during an Alaskan Cruise.  I had, of course, had canned salmon before but never smoked.  The smoked salmon I had enjoyed before this had always been bought sliced or in chunks in the refrigerated section.

I was having friends over for a casual gathering and decided to serve up a brunch buffet.  I remembered this can of Smoked Salmon and a recipe card that had been included with it for Smoked Salmon Dip.  I followed the directions on the recipe card and was very pleased with the results.

I had recently finished another gift that I had gotten from The Book Club Cookbook, The Vet Clinic by Dr. Dawn Filos.  This is a charming little book, not really a story but a series of stories in which she shares snippets of her life as a vet who provides house calls.  

I felt as if I were sitting across from Dr. Filos, perhaps enjoying brunch, as she regaled me with highlights of her career.  One of the stories she shares is of a birthday party she attended for a cat.  There was "tuna catserole" and "catnip brownies".  There were also other cats from the neighborhood that had been invited.  As you can imagine, the party did not go as planned LOL....

I don't have cats.  I don't throw birthday parties for my pets.  If I did have cats and threw them a party, this dip would be very well received by both the cats and their humans.

Canned Smoked Salmon Dip

Canned Smoked Salmon Dip

Canned Smoked Salmon combined with cream cheese, lemon juice, and mayonnaise creates a simple and delicious dip to schmear onto bread, bagel chips, and/or crackers.

Prep time: 5 MinTotal time: 5 Min

Ingredients

  • 1 can (7.5 oz) Smoked Salmon (I used Corsica)
  • 4 oz. cream cheese, room temperature
  • 1/4 c. mayonnaise
  • juice of one lemon
  • 2 scallions, white and light green parts, sliced

Instructions

  1. Place the salmon, cream cheese, mayonnaise, and lemon juice into the bowl of a food processor and pulse until well combined and smooth.
  2. Transfer to a serving bowl and sprinkle with the sliced scallions. Serve with slices of bread, crackers, and/or bagel chips.
