I served this delicious, nutty farro studded with asparagus as a side for chicken strips. I will be posting the chicken recipe next week when I host Sunday Funday and ask others to share a recipe that the Mom's in their life would enjoy. My Mom would have adored this meal.

Asparagus Farro
Crisp, tender asparagus mixed with hearty, nutty farro is a delicious side dish or vegan main course.
Ingredients
- 1 1/2 T. olive oil, divided
- 1 bunch asparagus, ends snapped, cut into thirds
- 1 c. farro
- 3 c. chicken broth
- salt and pepper, to taste
Instructions
- Place a skillet over medium-high heat. Add the 1/2 Tablespoon of oil, when heated add the asparagus, season with salt and pepper, and stir-fry for a few minutes, until crisp-tender. Remove from skillet to a plate and set aside.
- Add the remaining olive oil to the skillet, add the farro and cook, stirring, until toasted, about 2 minutes. Add the chicken broth and bring to a boil, reduce heat to a simmer, cover, and cook for about half an hour until farro is tender.
- Stir in the asparagus and continue to cook for another minute or two until asparagus is heated through before serving.
