Asparagus Farro with Chicken

I served this delicious, nutty farro studded with asparagus as a side for chicken strips.  I will be posting the chicken recipe next week when I host Sunday Funday and ask others to share a recipe that the Mom's in their life would enjoy.  My Mom would have adored this meal.

Farro is a chewy grain with a nutty flavor that pairs perfectly with the crisp asparagus. Farro is heart-healthy and fiber-rich, but more importantly, it is delicious!!

Asparagus Farro

Asparagus Farro

Crisp, tender asparagus mixed with hearty, nutty farro is a delicious side dish or vegan main course. 

Prep time: 5 MinCook time: 40 MinTotal time: 45 Min

Ingredients

  • 1 1/2 T. olive oil, divided
  • 1 bunch asparagus, ends snapped, cut into thirds
  • 1 c. farro
  • 3 c. chicken broth
  • salt and pepper, to taste

Instructions

  1. Place a skillet over medium-high heat. Add the 1/2 Tablespoon of oil, when heated add the asparagus, season with salt and pepper, and stir-fry for a few minutes, until crisp-tender. Remove from skillet to a plate and set aside.
  2. Add the remaining olive oil to the skillet, add the farro and cook, stirring, until toasted, about 2 minutes. Add the chicken broth and bring to a boil, reduce heat to a simmer, cover, and cook for about half an hour until farro is tender.
  3. Stir in the asparagus and continue to cook for another minute or two until asparagus is heated through before serving.

  2. I love farro, but it's not gluten-free so I can't make it when Jake is home. I will make this when it's just me and R one evening soon.
