PIzza Frittata
Pizza for breakfast? Absolutely, especially if all those wonderful flavors are cooked into a frittata. Perfect for Brunch or Brinner, it will certainly be a hit with your resident pizza lover.
Ingredients
- 1 T. olive oil
- 1/2 vidalia onion, diced
- 3 cloves garlic, minced
- 2 handfuls baby spinach
- salt and pepper, to taste
- 8 eggs
- 2 t. Italian herb seasoning
- 2 T. milk
- 1 1/2 c. Marinara Sauce
- 1/2 c. shredded mozzarella
- handful of mini pepperoni
Instructions
- Heat the oil in a cast-iron or oven-proof skillet over medium heat. Add the onions and garlic. Cook until fragrant and the onions are translucent.
- Add the spinach, season with salt and pepper, and cook until wilted.
- Whisk together the eggs, Italian herbs, milk, and marinara. Pour over the vegetables in the skillet and cook undisturbed for about 5 minutes until the edges are set.
- Sprinkle the cheese and pepperoni over the top and place into a preheated 425* oven for another 5 minutes or so, until cooked through and a knife inserted removes cleanly.
- Let rest a few minutes before cutting and serving.
