Tempura Chicken Nuggets #SundaySupper

Today we are sharing Fancy Finger Foods for Award Show Parties hosted by Christie of A Kitchen Hoor's Adventures.

I'm not big on the red carpet but I am big on parties for any reason whatsoever so I jumped right into this event.

I love serving up many different flavors and textures when setting up an appetizer buffet.  I also like to have a selection of hot and cold items.  Cooked and raw.  With plenty from which to choose whether my guests be carnivores, vegetarians or vegans.  I never want to leave any of my guests without something that they will enjoy.

Today, I am sharing some Tempura Chicken Nuggets.  These crunchy little nugget fry up in a flash and will be gone before you know it.


I served these up with a store bought sweet and sour dipping sauce.  They were gone in a hot minute and left me wishing I had doubled the recipe.  You can make these in nuggets or strips.  You can use the same batter for veggies and fish as well as chicken.


Enjoy these and all the other Fancy Finger Foods that you find linked at the bottom of this page while watching the red carpet event next week. These Chicken Nuggets are also great served up for dinner with a side of steamed rice and some stir fry veggies. This recipe will serve 4 as an entrée.

Tempura Chicken Nuggets

2 boneless, skinless chicken breasts cut into bite size pieces
1/2 c. flour
1/2 c. cornstarch
1 c. club soda
1 egg
salt and pepper to taste
peanut oil for frying

Combine the flour, cornstarch, club soda, egg, salt and pepper mixing until combined but some lumps remain.  Add the chicken and stir to coat.

Heat a few inches of oil in a large wok until shimmering (approx. 350*).  Cook the battered chicken, in batches, without overcrowding until golden brown and cooked through, about 4-5 minutes per batch.  Print Recipe

Cornflake Chicken Strips

Many of you are aware that we enjoy having our granddaughter each week from Tuesday morning until Wednesday evening when her Mama gets off work.


This means that each week we dedicate these 2 days to her.  Our household becomes a toddler house.  We play toddler games. We watch toddler movies and shows.  We go to the zoo, the park, the bounce house and the library for story time.  We build forts and castles with blankets, chairs and tables.  And we eat toddler friendly meals.


Luckily, she is a very good eater and will eat almost anything.  She will try new foods and normally finds that she likes them.  Our rule is that she needs to at least try it and if she doesn't like it she is allowed to spit it into her napkin.  Normally she smiles and say "mmmmmm".

She does have her favorites though so we tend to rotate the same menus for Tuesday nights.  Spaghetti with Meat SauceChicken Noodle SoupPepperoni pizza and Coconut Chicken Strips.

But I also serve up other types of chicken strips or nuggets according to what I have available in my pantry.  I use flavored bread crumbs or tempura batter or, in this case, cornflakes.


Served up with fresh veggies and ranch dressing, it made the perfect lunch for a busy toddler and was enjoyed by Grammy and Grampy too.


As you can see, she happily consumed all of her lunch and then was ready for naptime.  Phew.......naptime is a lifesaver...it gives us a chance to rest up and regroup so that the fun can continue in the afternoon.


These tasty strips are not only perfect for Toddler Tuesdays but would also be a welcome snack on game day.

Cornflake Chicken Strips

2 boneless, skinless chicken halves cut into strips
1/2 c. flour
salt and pepper, to taste
2 eggs, beaten
3 c. cornflake crumbs

Combine flour with salt and pepper and place in a shallow dish.  Place beaten eggs in another shallow dish next to the flour and a third shallow dish next to the eggs filled with cornflakes to create a dredging station.  

Place the chicken strips before the flour and a parchment or silicone lined baking sheet after the cornflakes.  

Take each piece of chicken and dredge it in the seasoned flour.  Dip the floured chicken into to egg, covering completely.  Dredge the egg covered chicken in the cornflakes and place onto the baking sheet.  Continue until all pieces are coated.

Bake in a preheated 400* oven for 15-20 minutes, until golden brown and an internal temperature of 165*.  Print Recipe

Jalapeno Poppers for #SundaySupper

It's September folks...you know what that means....Football season!!!  Now, I must confess that I am not a huge football fan.  I am, however, a huge party fan and football season means game day parties, tailgates, and gathering with friends and family.  Now, THAT, I can get into.  I don't even mind having the game on in the background.

In honor of the season, the folks over at Sunday Supper suggested that we share our favorite finger foods for our readers.


Tingting's friend, Charlie, came over for dinner the other night.  He mentioned that he had been having a hankering for jalapeno poppers all day.  


As luck would have it, I had gone to the Farmer's Market that morning and had bought a pile of jalapeno peppers.  I didn't know what I was going to make with them but I couldn't pass them up. They were gorgeous.


I also happened to have cream cheese, cheddar cheese and some bacon.  So, while they played in the pool with my Little Angel Face, I quickly put together these poppers for them to snack on before dinner.


They were very surprised when I brought the poppers out to the pool.  They were gone in a flash, I think Frank had one,  Ting had one or two and Charlie scarfed down the rest exclaiming how good they were and that he couldn't believe that I made him poppers.  Score a touchdown for the girl's mom!!

Baked Jalapeno Poppers

6 Jalapeno Peppers
2 oz. cream cheese, softened
1/4 c. shredded white cheddar cheese
6 strips bacon

Cut peppers, including stem, in half and remove all membrane and seeds.  Combine the cheeses and spread mound into one half of the peppers, topping with the other half.  Wrap a slice of bacon around the stuffed pepper and place onto a baking sheet.  Bake in a preheated 400* oven for 15-18 minutes, until bacon is crisped and pepper is tender.  Print Page
