I love having all different types of gatherings throughout the holidays. Elegant, sit down dinners with wines for every course. Casual buffet dinners where family and friends share holiday cheer. Fun gatherings of cocktails and finger foods. We invite family and friends over to help decorate the tree and make cookies, where we eat them as soon as they are cool enough to handle with cups of hot chocolate or glasses of ice cold milk.

Cheese and Bacon Stuffed Potato Skins
Ingredients
- 4 large russet baking potatoes
- Olive oil
- Kosher salt and pepper to taste
- 6 oz. shredded Colby Jack Cheese
- 3 oz. bacon bits
- Sour cream for serving.
Instructions
- Scrub the potatoes and dry with paper towels. Prick all over with a fork and rub with olive oil. Season liberally with the salt.
- Place potatoes on a rack over a baking sheet lined with aluminum foil and bake in a preheated 400* for 1-1 1/2 hrs, until insides are very soft and skin is crispy.
- Remove from oven and let cool. Halve the potatoes and scoop out the flesh, leaving about 1/4 inch of potato in the shell. Cut each half in half so that you have 16 quarters. Place potato skins onto a baking sheet lined with aluminum foil.
- Brush each quarter with olive oil and season with salt and pepper. Place under a broiler for about 5 minutes, until flesh is golden brown. Sprinkle with the cheese and bacon bits and return to broiler for a couple of minutes until cheese is melted.
- Transfer to a platter and serve with sour cream.
