Tender Pork Tenderloin, Caramelized Sweet Potatoes, and Roasted Apples cooked together in one skillet for an easy, weeknight meal.
I heated some oil in a skillet, seared the tenderloin, removed it from the pan, and set it aside while I seared the sweet potato slices. I pushed the potatoes aside, returned the pork to the pot, and placed chunks of apple on the other side. Popped it into the oven and had a glass of wine while it roasted. It was a perfect meal.
We are attending an afternoon wedding today with a reception following. Tomorrow is Mother's Day, and Amy has invited us over for dinner. Thursday evening, we are meeting our friends, the Fontaines, for dinner. Here is what we are enjoying for dinner the rest of the week.

Pork Tenderloin Skillet with Sweet Potatoes and Apples
Tender Pork Tenderloin, Caramelized Sweet Potatoes, and Roasted Apples cooked together in one skillet for an easy, weeknight meal.
Ingredients
- 1 large sweet potato, peeled and cut into 2" thick rounds
- 1 pork tenderloin, silverskin removed
- 1 large apple, cored and cut into large chunks
- 1 T. olive oil
- salt and pepper, to taste
Instructions
- Season pork tenderloin with salt and pepper, and allow to come to room temperature.
- Heat the oil in a large oven-safe skillet (I used cast iron) and sear the pork on all sides. Remove to a platter.
- Cook the potatoes in the same skillet until golden brown on one side, flip them over, and push them to one side of the skillet.
- Return the pork to the center of the pan, and nestle the apple chunks on the opposite side from the potatoes. Place the skillet in a preheated 425* oven and roast until the internal temperature of the pork reaches 145*, about 20 minutes.
- Remove from oven and let rest for 5 minutes before slicing the pork and serving.
