The recipe that I'm sharing today is a regular during Strawberry season. I first shared this recipe in 2015. I was using a different recipe format at the time that no longer allows my readers to print it, so I am resharing it today in a printable format.

I always double the Strawberry Compound Butter to keep in my refrigerator. It is great as a topping for pancakes or waffles or schmeared on toast or a bagel in the morning.

Grilled Chicken Breast with Strawberry Butter
Delicious, tender chicken breasts grilled to perfection and topped with a wonderful, fresh strawberry butter.

Ingredients
- 4 small chicken breasts, pounded to 1/2" each
- juice of 1 small orange
- 2 T. olive oil
- salt and pepper to taste
- 2 T. butter, softened
- 4 strawberries, finely minced
Instructions
- Place orange juice, olive oil, salt, and pepper into a sealable plastic bag and shake to combine. Add chicken, press to remove air, and place in the refrigerator for an hour to marinate.
- Combine the butter and minced strawberries, place on a piece of plastic wrap, roll into a tube, and refrigerate.
- Grill the chicken over medium-high heat for 3-4 minutes per side, until cooked through. Place on a serving platter, topping each chicken breast with a dollop of the strawberry butter.
