Margarita Tiramisu #SundayFunday

This fun Mexican take on an Italian classic is amazingly delicious.  True, it doesn't taste much like a Margarita nor a Tiramisu.  It's more like a Lemon Lime Cheesecake with Margarita soaked LadyFingers.

Mayuri of Mayuri's Jikoni is hosting today and chose this fun theme.  I was originally going to make a Lemon Tiramisu but then my daughter invited us to a Mexican Themed Pool Party so I decided to play a bit and turn it into a Margarita Tiramisu.

If you want an early morning laugh, just ask my husband to make you one of his Fantastic Margaritas at 6:30 in the morning as he is pouring coffee.  "Right now?" he asks to which I replied that I had already been up for over an hour.

He shook his head at me and complied, as he always does.  He quit trying to figure me out years ago!!
I poured that Margarita into a shallow bowl and started dipping some lady fingers into it and placing them on the bottom of a 9x13" baking pan.  Then I spread a layer of Mascarpone and Cream Cheese flavored with lemon pudding and lime juice and topped it with more of those Margarita soaked Cookies.

Another layer of the pudding, a smattering of freshly zested lime and into the refrigerator it went until it was time to head to our daughter's party.

I made a large pan of this scrumptious dessert because I wanted to serve about 15 people.  You can halve the recipe and use an 8 or 9" square pan with excellent results for smaller crowds.

Margarita Tiramisu

This fun Mexican take on an Italian classic is amazingly delicious. True, it doesn't taste much like a Margarita nor a Tiramisu. It's more like a Lemon Lime Cheesecake with Margarita soaked LadyFingers.

Ingredients

  • 1 (16 oz) carton Mascarpone cheese
  • 2 (8 oz) pkgs. cream cheese
  • juice of 1 lime
  • 2 (4 serving) pkgs instant lemon pudding mix
  • 2 c. milk
  • 1 Margarita (our recipe)
  • 36 Ladyfinger cookies
  • zest of 1 lime, for garnish, if desired

Instructions

  1. In large bowl of stand mixer, beat the mascarpone, cream cheese, lime juice and pudding mix together until combined.
  2. Reduced speed and slowly mix in the milk until incorporated. Increase speed and beat until combined. Set aside
  3. Place the margarita in a shallow bowl. Dip half of the cookies in the mix and place on the bottom of a 9x13" baking pan that has been treated with baking spray. You can turn and break the cookies to make them fit.
  4. Spread half of the pudding mixture over the cookies and then layer the remaining cookies on top. Spread with the remaining pudding mixture, garnish with lime zest, if desired.
  5. Refrigerate at least 4 hours or up to one day before serving.
