Cheese and Bacon Stuffed Potato Skins #HolidayPartyFood

Crisp potato skins filled with cheese and bacon and topped with sour cream are sure to be a hit at your next holiday gathering.

I love having all different types of gatherings throughout the holidays.  Elegant, sit down dinners with wines for every course.  Casual buffet dinners where family and friends share holiday cheer.  Fun gatherings of cocktails and finger foods.  We invite family and friends over to help decorate the tree and make cookies, where we eat them as soon as they are cool enough to handle with cups of hot chocolate or glasses of ice cold milk.

So I am very excited to get more party ideas.  Let's see what everyone brought to this party today......

These wonderful appetizers take some time and work but they can be made ahead of time and a lot of the time is hands off while the potatoes bake to perfection.

Once you have scooped out most the insides of the potatoes, cut them into quarters and fill them with cheese and bacon bits.  Right before you want to serve them you only need pop them under the broiler until the cheese is melted and bubbly.

Place them on a platter and add them to your appetizer buffet with a small bowl of sour cream for guests to add as they wish.  

Potato Bread

This recipe comes with an added bonus.  Save the potatoes that you scooped out and use them to make this amazing Potato Bread.  This bread is also a welcome addition to your appetizer buffet and is delicious slathered with goat cheese and fig jam.  Add a Charcuterie Board and maybe some Wings.  Don't forget some vegetable and/or fruit options.  This vegetable sushi is always a hit, as are these spiced apples

Cheese and Bacon Stuffed Potato Skins

Cheese and Bacon Stuffed Potato Skins

Crisp potato skins filled with cheese and bacon and topped with sour cream are sure to be a hit at your next holiday gathering.

Ingredients

  • 4 large russet baking potatoes
  • Olive oil
  • Kosher salt and pepper to taste
  • 6 oz. shredded Colby Jack Cheese
  • 3 oz. bacon bits
  • Sour cream for serving.

Instructions

  1. Scrub the potatoes and dry with paper towels. Prick all over with a fork and rub with olive oil. Season liberally with the salt.
  2. Place potatoes on a rack over a baking sheet lined with aluminum foil and bake in a preheated 400* for 1-1 1/2 hrs, until insides are very soft and skin is crispy.
  3. Remove from oven and let cool. Halve the potatoes and scoop out the flesh, leaving about 1/4 inch of potato in the shell. Cut each half in half so that you have 16 quarters. Place potato skins onto a baking sheet lined with aluminum foil.
  4. Brush each quarter with olive oil and season with salt and pepper. Place under a broiler for about 5 minutes, until flesh is golden brown. Sprinkle with the cheese and bacon bits and return to broiler for a couple of minutes until cheese is melted.
  5. Transfer to a platter and serve with sour cream.
