Leftover Turkey and Gravy Stuffed Potato #SundayFunday

Turn those Thanksgiving Leftovers into a delicious second dinner with these scrumptious, filling and comforting stuffed potatoes.

"When I was growing up, one of my favorite restaurants was a baked potato place with myriad fillings like stroganoff and broccoli and cheese, even chicken curry! Of course, they also served the more traditional potatoes with bacon, chives, sour cream and cheese. For this event, I challenge you to get creative! Make stuffed baked potatoes! They can be stuffed and double baked or just filled after baking. They can be big meal-sized potatoes or appetizer-sized baby ones."

As some of you may know, Amy of Amy's Cooking Adventures is married to my dear friends, Kirsten and John's, son Mike.  Kirsten passed away this past spring of COVID but John carried on tradition and prepared Thanksgiving dinner.  Amy and Mike came home to Michigan for the holiday.   Another tradition we have is that whenever Amy and Mike are in town we have them all over for dinner.

This was our first holiday dinner without Kirstie at our table.  It was hard but it was so wonderful being able to share time with her family who was so very important to her and whom I have come to love as I loved her.

Wine with Soup

We started off with Turkey Frame Soup and I opened up a bottle of Albino Armani Corvara Pinot Grigio.  It is a crisp, bright wine that I knew would pair perfectly with my meal that was starting with Thanksgiving Leftovers.  This wine is available at Total Wines for less than $15.  

It paired very nicely with the soup as well as the salad dressed with Cranberry Vinaigrette and these awesome potatoes stuffed with Thanksgiving Leftovers.

Leftover Turkey and Gravy Stuffed Potatoes

Leftover turkey and gravy combine with cheese to make amazing stuffed potatoes that are a meal unto themselves.
Prep time: 20 MinCook time: 1 H & 30 MTotal time: 1 H & 50 M


  • 6 large russet baking potatoes
  • olive oil
  • Kosher salt and pepper, to taste
  • 1 stick butter, cut into tablespoons
  • 4 oz. cream cheese, diced
  • 1/2 c. leftover gravy
  • 1 1/2 c. chopped leftover turkey meat
  • 1 1/2 c. shredded Colby Jack cheese
  • Additional gravy, if desired


  1. Pour the olive oil in a shallow bowl and generously season with the salt and pepper.
  2. Scrub and dry the potatoes. Prick with a fork and rub with the seasoned olive oil. Place a piece of aluminum foil on the bottom rack of an oven preheated to 400*. Place the potatoes directly onto the rack above and bake for about an hour, until fork tender and the skins are crisp.
  3. Remove from the oven and allow to cool enough to be handled. Cut each potato in half lengthwise and scoop the insides into the large bowl of a stand mixer, leaving enough flesh intact to form shells of the skins.
  4. Add the butter, cream cheese and gravy to the potatoes and, using the paddle attachment, mix until combined. With the speed on low season with salt and pepper and add 1 cup of the shredded cheese and turkey just until incorporated.
  5. Divide the potato filling between the skins and place on a baking sheet. Top with the remaining shredded cheese, pressing down slightly so it adheres to the filling. Bake in a preheated 350* oven for 20-30 minutes, until heated through and cheese is melted.
  6. Serve and pass additional gravy, if desired.

    There is a Cuban place near here that makes turkey dinner leftover stuffed potato balls that are sooooo good. This reminds me of them! I definite must try.
