Grilled Loaded Redskin Potatoes #BBQWeek

Tender chunks of redskin potatoes covered with melted cheese, sprinkled with crisp bacon and flavorful chives all topped with a dollop of sour cream.  Who wouldn't love these potatoes at their next meal?

These are the great recipes being shared today.  I served my potatoes up with grilled steaks and what a huge hit.  It's not often that the side dish beats out a steak.......



Start out by halving your baby red skin potatoes.  Toss them in olive oil, salt and pepper and put them into a grill pan.  Shut the lid on the grill and let them cook for about 15-20 minutes, shaking the grill pan, occasionally.


When the potatoes are tender and a beautiful golden brown, remove them from the grill and put them onto a heavy duty sheet of aluminum foil.  I used foil made for grilling that has a non stick coating on one side.  If you are using regular foil you may want to spray it with cooking spray before adding the potatoes.


Sprinkle the potatoes with the cheese and bacon.  Seal the foil around, making a packet, and place back on the grill for just a few minutes to melt the cheese.

Slide onto a plate for serving and sprinkle with chopped chives. 


I added a dollop of sour cream before serving as it was only the three of us and I knew we all wanted sour cream.  If you aren't sure, pass the sour cream separately.

  • 1 1/2 lbs. small redskin potatoes, halved
  • 1 T. olive oil
  • salt and pepper, to taste
  • 4 slices thick cut bacon, diced and cooked crisp
  • 1 c. shredded colby jack cheese
  • chopped chives for garnish
  • sour cream, if desired

How to cook Loaded Grilled Redskin Potatoes

  1. Toss the potatoes with the olive oil, salt and pepper.  Transfer to a grill pan and place on a preheated grill over med high heat.  Close the grill lid and roast the potatoes, shaking the pan occasionally, until potatoes are tender and golden brown, about 15 minutes.
  2. Pour the potatoes from the grill pan onto a large sheet of aluminum foil.  Sprinkle with the cheese and bacon.  Enfold the potatoes with the foil, making a packet, and return to the grill for about 3-4 minutes.
  3. Open the packet and slide the potatoes onto a serving platter.  Garnish with chopped chives and sour cream, if desired.
