I happened to have half a can of pumpkin puree left from when I made this Pumpkin Cornbread for dinner one evening. I guess I could have used that for my quick bread recipe LOL. However, when I think of tea breads I think of something a little fancier than a rustic cornbread, regardless of how delicious it was.
I also have a crisper drawer full of Michigan apples that we stock up on each fall so I wanted to incorporate them into this recipe. The result was this scrumptious, moist and tender bread that we enjoyed for breakfast over the weekend. I hope that you enjoy it as well.

Apple Pumpkin Bread
Delicious warmly spiced pumpkin bread with studded with chunks of apple. This bread is delicious for breakfast or a snack with your afternoon tea.

Ingredients
- 1 2/3 c. flour
- 1 1/2 c. sugar
- 1 t. baking soda
- 1/4 t. baking powder
- pinch of salt
- 1/2 t. cinnamon
- 1/2 t. nutmeg
- 1/4 t. cloves
- 3/4 c. canned pumpkin
- 1/2 c. water
- 2 eggs
- 1/3 c. canola oil
- 1 large apple, peeled, cored and chopped
Instructions
- In large bowl combine the flour, sugar, baking soda, baking powder, salt, cinnamon, nutmeg and cloves. Make a well in the center.
- Whisk together the pumpkin, oil, water and eggs. Pour into the well and mix with a wooden spoon until dry ingredients are moistened.
- Fold in the apples and pour batter into a 9x5" loaf pan that has been treated with baking spray.
- Bake in a preheated 325* oven for 1 1/2 hrs, until a skewer inserted into the middle removes cleanly.
- Let cool in pan for 10-15 minutes before turning onto a wire rack to cool completely.
