Leftover Oatmeal Muffins #NationalOatmealMonth

These muffins, starting with leftover oatmeal and filled with your favorite oatmeal toppings is a delicous, nutritious, grab and go breakfast.

It's National Oatmeal Month........
My friend Jolene, of Jolene's Recipe Journal, asked the Festive Foodies to join her today in celebrating National Oatmeal month.   We love oatmeal around this household so I'm anxious for some new recipes.  Let's see what other's have cooked up for us today........
I am loving all these different flavors of oatmeal.  Especially now that I know I can turn the leftovers into these tasty and easy muffins to enjoy all those flavors a second time around.

      Leftover Oatmeal

      I just had plain, leftover 5 minute oats that we had enjoyed for breakfast adding our own favorite toppings.  I always add dried cranberries and brown sugar so I included these ingredients in my muffins.  You can use any type of leftover oatmeal you have on hand, steel cut and quick work just as well as my 5 minute oats.

      This recipe is very versatile.  Prefer honey as your sweetener?  Go for it.  I made 6 jumbo muffins.  You can make any size muffins you want.

      As always, this recipe is just a guideline and can be made to your liking using whatever ingredients you have on hand.  I love having leftover recipes available because nothing, to me, is worse than wasting perfectly good food.

      • Leftover Oatmeal Muffins
      • These muffins, starting with leftover oatmeal and filled with your favorite oatmeal toppings is a delicous, nutritious, grab and go breakfast.
      • Prep time: 5 MinCook time: 30 MinTotal time: 35 Min
      • Ingredients
      • Instructions
        • 1 1/2 c. leftover, cooked oatmeal
          • 2 eggs
            • 3/4 c. canola oil
              • 2/3 c. brown sugar
                • 2 1/4 c. flour
                  • pinch of salt
                    • 1 t. cinnamon
                      • 1 1/2 T. baking powder
                        • 1/2 c. dried cranberries
                          • Notes:
                            • In large bowl of stand mixer, fitted with the paddle attachment, mix the oatmeal, brown sugar and oil until blended.  Add the flour, baking powder, salt and cinnamon.  Mix on low until just blended.  Stir in the cranberries.
                              • Divide between 6 jumbo muffin pans that have been treated with baking spray.  Bake in a preheated 350* oven for about half an hour, until a skewer inserted removes cleanly.
