Easy and Elegant Garlicky Shrimp Pasta #FishFridayFoodies

Garlic and Olive Oil

This dish has a LOT of garlic.  I'm a huge garlic lover and don't believe that there is ever a thing as too much garlic.  The only other ingredients in this dish is the shrimp, seasonings and the pasta.  I served it up with a simple chopped salad and a loaf of rustic bread.  I kept dessert very easy as well serving up a No Bake Banana Coconut Cream Pie.

It was a very casual evening with dear friends who we don't get to see often enough and wanted to be able to spend as much time as possible visiting.  This was a perfect menu for that purpose.

You can halve the recipe and it would make an amazing and lovely Valentine Day Dinner paired with a bottle of bubbly, sparkling Rose wine.

Easy and Elegant Garlic Shrimp Pasta

This recipe is wonderful to serve when having guests because it goes together so quickly and easily leaving you plenty of time to spend with your company.

Ingredients

  • 8 oz. thin spaghetti, cooked per package directions.
  • 3 T. minced garlic
  • 3 T. extra virgin olive oil
  • 20 large shrimp, peeled and deveined
  • salt and crushed red pepper flakes, to taste

Instructions

  1. Saute the garlic in olive oil in a large skillet over med high heat for a minute.  Add the shrimp and continue to cook, tossing the shrimp until it turns pink, about 4-5 minutes. Season with salt and crushed red pepper.  
  2. Place the pasta on a platter and pour the shrimp and seasoned oil over all.
