Morning Glory Muffins #MuffinMonday

These tender, tasty muffins retain their moistness with the addition of carrot, apple, raisins and coconut.  What a great way to start the day.


Welcome to this month's edition of Muffin Monday......
It's been a couple of months since I've participated in Muffin Monday and I have missed it.  It is pretty sad when life is so busy that you can't find time to throw together some muffins.  They are about the easiest thing in the world.  Muffins take only moment mix up and minutes to bake after which you are rewarded with delicious, portable breakfasts all week long.


These Morning Glory Muffins take just a fraction more time because the carrots and apple need to be shredded.  My food processor made easy work of that in about 20 seconds.


Combine the carrots, apple and coconut with the dry ingredients.


Incorporate the wet ingredients into the dry and stir in the raisins.


This recipe makes 6 muffins which is perfect for my family.

Morning Glory Muffins

These tender, tasty muffins retain their moistness with the addition of carrot, apple, raisins and coconut. What a great way to start the day.

ingredients:

  • 1 c. flour
  • 1/4 c. sugar
  • 1/4 c. brown sugar
  • 1 t. cinnamon
  • 1 t. baking soda
  • pinch of salt
  • 1 carrot, scraped and shredded
  • 1 small apple, peeled, cored and shredded
  • 1/3 c. sweetened shredded coconut
  • 1/4 c. raisins
  • 2 eggs
  • 1/3 c. canola oil
  • 1 t. vanilla

instructions:

How to cook Morning Glory Muffins

  1. Combine the flour, sugars, cinnamon, soda and salt in a large bowl.  Stir to combine.  Add the carrot, apple and coconut.  Stir until fruit is coated.
  2. Make a well in the center of the flour/fruit mixture.  Add the eggs, oil and vanilla into the well and stir until moistened.  Stir in the raisins.
  3. Divide the batter between 6 muffin cups that have been treated with baking spray or lined with paper cups.
  4. Bake in a preheated 350* oven for 20-25 minutes, until a skewer inserted in the center removes cleanly.
