Welcome to this month's edition of Muffin Monday......
These Morning Glory Muffins take just a fraction more time because the carrots and apple need to be shredded. My food processor made easy work of that in about 20 seconds.
Combine the carrots, apple and coconut with the dry ingredients.
Incorporate the wet ingredients into the dry and stir in the raisins.
This recipe makes 6 muffins which is perfect for my family.

Morning Glory Muffins
These tender, tasty muffins retain their moistness with the addition of carrot, apple, raisins and coconut. What a great way to start the day.
prep time: 10 Mcook time: 25 Mtotal time: 35 M
ingredients:
- 1 c. flour
- 1/4 c. sugar
- 1/4 c. brown sugar
- 1 t. cinnamon
- 1 t. baking soda
- pinch of salt
- 1 carrot, scraped and shredded
- 1 small apple, peeled, cored and shredded
- 1/3 c. sweetened shredded coconut
- 1/4 c. raisins
- 2 eggs
- 1/3 c. canola oil
- 1 t. vanilla
instructions:
How to cook Morning Glory Muffins
- Combine the flour, sugars, cinnamon, soda and salt in a large bowl. Stir to combine. Add the carrot, apple and coconut. Stir until fruit is coated.
- Make a well in the center of the flour/fruit mixture. Add the eggs, oil and vanilla into the well and stir until moistened. Stir in the raisins.
- Divide the batter between 6 muffin cups that have been treated with baking spray or lined with paper cups.
- Bake in a preheated 350* oven for 20-25 minutes, until a skewer inserted in the center removes cleanly.

Morning glory muffins are one of my favorites, Wendy! I don't know how healthy they actually are but I always feel virtuous eating them.
