There has sure been a ton of wonderful recipes shared this week. Our readers are ready to celebrate Spring and all of it's holidays including Easter and Mother's Day.
This recipe that I'm sharing today is not only perfect for these holidays but it is quick and easy enough to serve anytime you want to share a great dessert with those you love.
I started out with a store bought graham cracker crust. I added a layer of chocolate mixed with whipped cream and coconut.
The final layer is Instant Coconut Cream Pudding that you make per package directions.
Refrigerate until set and you are ready to serve it up.
I served it up with another dollop of freshly whipped cream and we dug in.
Soooooooooo good!!

Easy as Pie Coconut Cream Pie
This delicious and easy peasy pie starts with a graham cracker crust filled with a chocolate coconut layer, followed by a coconut pudding layer and topped with fresh whipped cream. YUM
ingredients:
- 1 prepared graham cracker crust
- 2 oz. semi sweet chocolate chips, melted
- 1 c. heavy cream, whipped
- 3/4 c. flaked coconut
- 1 (3 oz) pkg. coconut cream instant pudding
- 1 1/2 c. milk
- Additional heavy cream , whipped, for garnish, if desired
instructions:
- Combine the melted chocolate chips, coconut and 1 cup of whipped cream until well combined. Spread into the bottom of a prepared graham cracker crust.
- Whisk together the pudding mix and milk for 2 minutes and then set aside for 5 minutes to thicken. Pour over the chocolate layer. Cover and refrigerate for 4 hours or longer, until ready to serve.
- Divide pie into 8 wedges and top with additional whipped cream, if desired.

ReplyDeleteIt is, this is one of those recipes where I always try to have the ingredients in my pantry. Should I get a call from the church requesting a dessert for the funeral committee it only takes a moment to throw it together.
