Moo Shu Chicken Tacos inspired by The Lego Movie #FoodnFlix

This Moo Shu Chicken is put into a slow cooker until you are ready for dinner.  Spoon onto soft taco shells and top with prepackaged cole slaw mix for a quick, easy and delicious Taco Tuesday.


These tacos were inspired by The Lego Movie, our FoodnFlix selection for this month........





This movie was chosen by Kelley of Simply Inspired Meals.  Kelley chose this movie to coincide with the opening of the sequel.  I had never seen this movie.  I live under a rock.

My friends, Kirsten and John, love this movie and have a copy that they said I could borrow but I found it on demand and recorded it.

The Angel Face and I sat down one evening and watched it together.  She really liked it.  I thought it was cute, but got bored with it quickly.  There was a lot of humor in the movies aimed towards adults, no risque at all, just throwbacks to the past.  I would laugh and the Angel Face would laugh along with no idea why.  We had fun and I'm glad I sat and watched it with her.

There wasn't much food in the movie.  There was a lego croissant and a lego turkey drumstick.  There was mention of the importance of a good breakfast and there were several mentions of Taco Tuesday.



We do celebrate Taco Tuesday in our house at least once a month and I'm always on the lookout for new taco recipes.  I was excited to find this new one at Taste of Home.

This delicious Moo Shu Chicken is made in a Slow Cooker.  We had it in tacos the first night and then over rice a couple of nights later.  It was delicious both ways.   The recipe makes 8 servings so if you are a family of 3 or 4 you can plan on having 2 nights worth of meals.

Moo Shu Chicken Tacos

This Moo Shu Chicken is put into a slow cooker until you are ready for dinner. Spoon onto soft taco shells and top with prepackaged cole slaw mix for a quick, easy and delicious Taco Tuesday.

ingredients:

  • 6 boneless, skinless chicken breast halves
  • 1 lg. Vidalia onion, chopped
  • 1 sweet red pepper, cut into chunks
  • 2/3 c.  chopped dried pineapple
  • 1/2 c. chopped dried mango
  • 1 (15 oz) can diced tomatoes
  • 2/3 c. hoisin sauce
  • 1 T.  Chili Garlic Sauce
  • 16 soft taco shells or flour tortillas
  • 1 bag cole slaw mix

instructions:

  1. Place the chicken, onions, red pepper,  pineapple,  and mango in the crock of a slow cooker.  
  2. Stir together the tomatoes, hoisin sauce and chili garlic sauce.  Pour over the chicken, veggies and fruit.  
  3. Cover and cook on low for 3-4 hrs.  Remove the chicken to a cutting board and using two forks, shred the meat.  Return the meat to the crock and stir to combine. Heat through and serve on soft taco shells, topped with the coleslaw mixture.
