Today is the first day of a week long event hosted by Ellen of Family Around the Table and Christie of A Kitchen Hoor's Adventures. There are a LOT of amazing recipes listed there that I cannot wait to try. Summer, in our house, means lots of outdoor entertaining around the pool. My brother and his wife visit with us each July from California so it is a month long celebration of family and friends with BBQ's nearly every night.
This pasta starts off with grilled summer vegetables and fresh tomatoes. It is perfect, especially during the summer when tomatoes are in season. It can be served as a main dish or as a side. It is healthy, nutritious and delicious.
The recipe as written makes 4 generous main dish servings. It is easily doubled and tripled for crowds. Don't forget to stop back by tomorrow to see what we're cooking up for you.......
Grilled Veggie Pasta
Yield: 4 servings

Pasta tossed with fresh tomatoes, basil, grilled vegetables and olive oil makes for a quick, easy and tasty Meatless Monday meal.
ingredients:
- 1/2 lb pasta, cooked per package directions
- 3 tomatoes, diced
- 5 basil leaves, torn into pieces
- 1/2 c. olive oil, divided
- salt and pepper, to taste
- 1 baby eggplant, cut into bite size chunks
- 1 small zucchini, cut into bite size chunks
- 1 small yellow squash, cut into bite size chunks
- 1/2 Vidalia onion, cut into bite size chunks
- Parmesan cheese for serving.
instructions:
How to cook Grilled Veggie Pasta
- Place the eggplant, zucchini and yellow squash into a bowl. Add 2 T. of the olive oil. Season with salt and pepper and toss to coat. Transfer to a grill pan and grill over med high heat until vegetables are tender, about 15-20 minutes.
- Meanwhile, toss the tomatoes with the oil, basil, salt and pepper in a large bowl. Set aside.
- When veggies are tender and pasta is cooked per package directions, add both to the tomatoes and toss to coat with the oil and seasonings. Sprinkle with Parmesan cheese and serve warm or at room temperature.
