Oatmeal Zucchini Muffins with Dried Cranberries

Delicious, tender, seasonal muffins filled with warm fall flavors.  Enjoy them for breakfast, as a snack in your lunch, or as an afternoon treat with tea.

Zucchini Oatmeal Muffins

Zucchini Oatmeal Muffins

Oatmeal Muffins kept moist with shredded Zucchini, flavored with warm spices, and studded with dried Cranberries.

Ingredients

  • 1 c. shredded zucchini
  • 1/2 c. brown sugar
  • 1/2 c. sugar
  • 1/3 c. vegetable oil
  • 2 eggs
  • 1 t. vanilla
  • 1 c. flour
  • 1/2 c. old-fashioned oats
  • 1/2 t. baking powder
  • 1/2 t. baking soda
  • pinch of salt
  • 1 t. cinnamon
  • 1/2 c. dried cranberries

Instructions

  1. Place the zucchini in a fine sieve colander and press down with a paper towel, removing as much moisture as you can. Place the zuchinni into a bowl with the sugars, vegetable oil, eggs and vanilla. Stir with a fork to combine.
  2. Whisk together the flour, oats, baking powder, baking soda, salt, and cinnamon. Make a well in the center and pour the zucchini mixture into the well. Mix just until combined. Stir in the cranberries.
  3. Divide the batter between 12 muffin cups that have been treated with baking spray or lined with papers. Bake in a preheated 350* oven for 20-25 minutes, until a skewer inserted in the center removes cleanly.
