Welcome to Fish Friday, Lenten edition. Fish Fridays are a constant struggle for me. My husband likes fish, fried. He will eat shrimp occasionally, but also prefers it fried. He will eat scallops once in a blue moon. He will eat calamari, fried, of course.
I have had some success. He loves this Mahi Mahi Matacumbe, and I use this style for many different types of fish. He will also eat cod especially if served in a flavorful sauce like this Mediterranean Cod.
He is not crazy about Salmon unless it is smoked and used in a dip like this Smoked Salmon Mousse.
I love Salmon and it is one of the healthiest fish you can eat so I keep trying. I have served it Elvis style, as a Wellington, with a Hot Honey Glaze, and flavored with Pineapple and Teriyaki. He always eats whatever I place in front of him and sometimes he would grudgingly admit that "it's not too bad".
When I saw this recipe for garlic butter, two of his favorite ingredients, I thought he might enjoy it. I tossed some pasta in the same garlic butter that I had basted the fish. I thought it was delicious. Frank said it was "all right".
So, if you are a salmon lover, you will love this recipe. If not, well, maybe you will think it is all right.

Garlic Butter Salmon
Beautiful Salmon Fillets, pan-seared before being basted in Garlic Butter to a perfect medium rare.

Ingredients
- 4 salmon fillets (6 oz. each), skinned
- salt and pepper, to taste
- 1 T. olive oil
- 3 cloves garlic, minced
- 6 T. butter, cut into cubes
- juice of half a lemon
Instructions
- Season the salmon with salt and pepper. Let rest on the counter until room temperature, about 30 minutes.
- Heat the olive oil in a skillet large enough to hold all the fillets without crowding. Sear the top side of the fillets until golden, 2-3 minutes.
- Flip the fillets and cook for only a minute before adding the butter. When the butter is melted and foamy, add the garlic and begin basting the salmon fillets for a minute or two until an internal temperature of 122* is reached.
- Remove to a platter and let rest for a few minutes. Remove the butter from the heat and stir the lemon juice into the butter. Drizzle the butter over the salmon fillets and serve.
