I removed the skin from the chicken thighs before cooking. Just personal preference. The method is the same whether you are using skin-on or skinless. I served it over steamed white rice. The sauce was delicious drizzled over that rice.

Garlic Honey Chicken Thighs
Skinless, bone in chicken thighs, cooked in a garlic and honey sauce that reduces to a wonderful, sticky glaze.

Ingredients
- 4 chicken thighs, I used bone-in, skinless
- salt and pepper, to taste
- 2 t. olive oil
- 1/2 sweet onion, diced
- 5 cloves garlic, minced
- 1/2 c. honey
- 1/4 c. soy sauce
Instructions
- Season the top of the chicken with salt and pepper. Heat the olive oil in a skillet set over medium-high heat. Add the chicken, seasoned side down, and season the bottom of the chicken.
- Cook for about 3 minutes, until top side is browned. (you may want to cook for a minute or two longer for skin-on thighs).
- Flip the chicken over, and add the onion and garlic to the pan. Cook for another 3 or 4 minutes, until the onions and garlic are softened and fragrant, stirring occasionally.
- Whisk together the honey and soy sauce. Add to the pan, and stir, scraping up any browned bits stuck to the bottom of the pan.
- Cover the pan, reduce heat to medium, and cook another few minutes until the chicken reaches an internal temperature of 165* and the sauce has reduced to a syrupy glaze.

I hate when a recipe says it's Garlic XYZ and there's barely any in it. Five cloves is a nice hearty amount! Definitely going to give this one a go!
