Gingerbread Cookies and a Book Review #ChristmasCookieWeek

Gingerbread Cookies are the perfect way to start off the Holiday Season.  I had my Angel Face Kitchen Elf help me decorate.  She did a great job!!

We are baking Christmas Cookies this week......

Jolene of Jolene's Recipe Journal is hosting our event this year.  A dozen bloggers have joined together to share dozens of Christmas Cookie Recipes all week long.  

I joined in the fun on Monday with Christmas Monster Cookies. Today, I am sharing a classic, The Gingerbread Man.  Stay tuned on Friday for my final cookie of this event.  It is worth the wait.

Gingerbread Cookies

We baked up both gingerbread men and gingerbread stars.  I supplied the Angel Face with store-bought icing in a tube and assorted candies and sprinkles and set her loose.  Look what a great job she did!!!

These cookies are soft, chewy, and spicy.  This simple recipe can be cut into any shape and decorated however you want. The cookies can be made ahead of time making it a great project to have ready for when the kiddos arrive.

I was inspired to make Gingerbread Cookies while reading Tender Mercies by Lauraine Snelling.

This is the fifth book of a series I have been reading by this author.  It follows a family as they emigrate to the Dakota territory from Norway.  I have been enjoying the novels that read like a Hallmark series on television. 

You come to know and love the characters.  You rejoice in their success and cry at their sorrows.  I am always anxious to read the next book in the series and will be disappointed when I finish the series in two more books.

Tender Mercies starts during the Christmas Season and mentions Gingerbread and Cookies numerous times.  I decided to make some Gingerbread Cookies for Christmas Cookie Week.  I enjoyed them as much as I enjoyed the book.

Gingerbread Cookies

Gingerbread Cookies

These cookies are soft, chewy, and spicy. This simple recipe can be cut into any shape and decorated however you want. The cookies can be made ahead of time making it a great project to have ready for when the kiddos arrive.

Ingredients

  • 3 c. flour
  • 3/4 c. dark brown sugar
  • 3/4 t. baking soda
  • 1 T. cinnamon
  • 1 T. ground ginger
  • 1/2 t. cloves
  • 1/2 t. salt
  • 1 1/2 sticks of butter, room temperature, cut into 12 pieces
  • 3/4 c. molasses
  • 2 T. milk
  • cookie icing, sprinkles, and candies for decorating

Instructions

  1. Place the flour, brown sugar, baking soda, cinnamon, ginger, cloves, and salt into the bowl of a food processor and pulse once to combine.
  2. Add the butter and pulse several times until the mixture resembles fine meal.
  3. Pour the mixture into the large bowl of a stand mixer fitted with the paddle attachment. With the mixer on low speed gradually add the molasses and milk and mix until combined.
  4. Divide into two portions and shape each into a disc. Wrap in plastic wrap and refrigerate for 2 hours (and up to overnight) or place in the freezer for 20 minutes, until firm.
  5. Remove 1 portion of the dough and place onto a well-floured work surface. Use a rolling pin to roll the dough into 1/2" thickness. Cut into desired shapes and place onto baking sheets covered with parchment or a silicone mat. Place this cookie sheet into the refrigerator.
  6. Reroll the dough and cut more shapes. If the dough is getting sticky, form it into a disc and return it to the refrigerator while you work with the second portion of the dough.
  7. When all the cookies are cut and in the refrigerator, preheat the oven to 350*. When the 15oven is preheated, remove the cookies from the refrigerator and place them directly into the oven. Bake for about 10 minutes, until the centers are set.
  8. Let cookies cool for 5 minutes on the pans before removing them to wire racks to cool completely before decorating as desired.

Prep time does not include decorating the cookies.
