Christmas Monster Cookies #ChristmasCookieWeek

Happy December.  Let the Holiday Baking commence.  These Monster Cookies become seasonal when you add Red and Green Peanut Butter M&M's.  They are best enjoyed with a glass of cold milk, so be sure to leave some out for Santa with these cookies when you head for bed on Christmas Eve.

Christmas Monster Cookies

I found some Red and Green Peanut Butter M&M's and turned them into a Christmas version of one of our favorite treats, Monster Cookies.

Monster Cookies, sometimes called Clean Out the Pantry Cookies, are great for using up all those odds and ends you have sitting in your cupboard.  It is a conglomeration of flour, oats, candy, nuts, cereal and anything else you love and want to throw in.  Peanut butter?  Go for it.  More chocolate? Of course.  Sprinkles?  Go with the season.

Christmas Monster Cookies

These Monster Cookies become seasonal when you add Red and Green Peanut Butter M&M's.

Ingredients

  • 2 sticks butter, room temerature
  • 1 c. sugar
  • 1 c. brown sugar
  • 2 eggs
  • 1 T. vanilla
  • 1 1/2 c. flour
  • 1 t. baking powder
  • 1/2 t. baking soda
  • large pinch of salt
  • 1 c. rolled oats
  • 1 c. chopped pecans
  • 1/2 c. chocolate chips
  • 1 c. peanut butter M&M's
  • 1 1/4 c. Rice Krispies

Instructions

  1. Cream the butter and sugar in the large bowl of a stand mixer, fitted with the paddle attachment. Add the eggs, one at a time, beating well after each. Mix in the vanilla.
  2. Whisk together the flour, baking powder, baking soda, and salt. With the mixer on low speed, gradually add to the creamed mixture until combined.
  3. Add in the oats, nuts, chocolate chips, and M&M's until combined. Stir in the Rice Krispies just until incorporated.
  4. Use a small cookie scoop and place balls onto baking sheets, that have been lined with parchment paper or a silicone mat. Bake in a preheated 375* oven for 10-12 minutes, until golden brown.
