I participated on Monday with some fun Christmas Monster Cookies. I returned Wednesday with some Gingerbread Men.  Today, I'm sharing these delicious little morsels.  If you are a fan of chocolate-covered cherries, you will love these cookies.

Frank is a huge Chocolate Covered Cherry fan, when he tried these cookies his eyes lit up.  I think we have a new holiday tradition.

Chocolate Covered Cherry Cookies

Chocolate Covered Cherry Cookies

Soft chocolate cookies flavored with almond paste and cherry kirsh, topped with cherries and a chocolate drizzle. You will be proud to serve and gift these decadent, elegant cookies

Ingredients

  • 1 c. flour
  • 1/2 c. baking cocoa
  • 1 t. baking powder
  • pinch of salt
  • 6 T. almond paste, broken into small pieceslas
  • 1 c. sugar, divided
  • 6 T. butter, room temperature
  • 1/2 t. vanilla
  • 1 egg
  • 1 1/2 t. cherry kirsch
  • 30 Maraschino cherries, drained, 2 T. juice reserved
  • 1/4 c. water
  • 4 oz. chocolate chips

Instructions

  1. Whisk together the flour, cocoa, baking powder, and salt. Set aside.
  2. Place the almond paste and 1/2 cup of the sugar into the large bowl of a stand mixer, fitted with the paddle attachment. Beat on low speed until the almond paste is crumbly. Add in the butter, half at a time, and beat until the mixture is pale and fluffy.
  3. Add the vanilla, egg, and kirsch. Beat until smooth. Turn the mixer to low and gradually add the flour mixture until combined.
  4. Portion the dough into 30 balls spaced evenly on cookie sheets lined with parchment paper or silicone mats. Press a cherry into the center of each cookie ball, flattening them. Place the trays in the refrigerator while you preheat the oven to 350*.
  5. Bake the cookies for 12-15 minutes, rotating the pans halfway through the cooking time. When edges are set and cookies are puffed, remove from the oven and let cool on the baking sheet for a couple of minutes before removing them to a wire rack to cool completely.
  6. Combine the remaining 1/2 cup of sugar, the reserved cherry syrup, and a 1/4 cup of water in a saucepan over med-high heat. Bring to a boil, stirring until the sugar is completely dissolved. Remove from heat and stir in the chocolate chips until melted.
  7. Drizzle the glaze over the cherries in the cooled cookies. Allow glaze to set before serving.
