Many of the Greek recipes I share, including this one, are adapted from It's All Greek To Me by Debbie Matenopoulos. The recipes in this cookbook are concise, easy to follow, and turn out perfectly delicious every time.
Tzatziki
Ingredients
- 1/2 of an English Cucumber
- salt, to taste
- 2 c. Plain Greek Yogurt
- 1 T. garlic paste
- 1/3 c. olive oil
- 1 T. white wine vinegar
- 1 T. minced dill weed fronds
Instructions
- Using the shredder attachment of your food processor, shred the cucumber and toss with a couple of pinches of salt. Place into a fine mesh sieve over a bowl and allow to drain for 10-15 minutes.
- Grab handfuls of the cucumber and squeeze out any moisture left and place it into a bowl. Add the yogurt, garlic paste, olive oil, vinegar, and dill.
- Stir to combine and refrigerate for a couple of hours before serving to allow the flavors to blend.

ReplyDeleteLove tzatziki. Always have some in the fridge for those healthy snack options. I add an apple, banana, blueberries or grapes and it makes a yummy snack.
