Orange and Pear Muffins

The New Year is nearly upon us.  I try to start each year on a healthy note after all the excess of the holidays at the end of the year.  These muffins are made with Whole Wheat Flour and Wheat Germ.  They are sweetened with fresh Pears and Applesauce then topped with Pear slices and a sprinkle of Citrusy sugar.

These are a great way to start off your day whether you are relaxing with a cup of coffee or rushing out the door to work, school, or exercise class if that is part of your resolve in 2025.

Orange and Pear Muffins

Ingredients

  • 1/2 c. + 2 t. sugar
  • 2 t. grated orange zest
  • 1/2 c. wheat germ
  • 1 1/2 c. whole wheat flour
  • 1 t. baking powder
  • 1/2 t. baking soda
  • 1/2 t.cinnamon
  • pinch of salt
  • 1/4 c. applesauce
  • 1/2 c. buttermilk
  • 1/4 c. olive oil
  • 1 egg
  • 1 pear

Instructions

  1. Combine 2 teaspoons of sugar with the orange zest in a small bowl. Set aside.
  2. Whisk together the flour, wheat germ, baking powder, baking soda, cinnamon, salt, and 1/2 cup of sugar. Make a well in the center. Set aside.
  3. Whisk together the applesauce, buttermilk, oil, and egg. Pour into the well of dry ingredients and mix just until combined.
  4. Cut half of the pear into small dice and fold into the batter. Cut the other half of the pear into thin slices.
  5. Divide the batter between a 12-cup muffin tin treated with baking spray. Arrange the sliced pear on top of each and sprinkle with the sugar/orange zest combination.
  6. Bake in a preheated 350* oven for 25 minutes, until a skewer inserted into the center of a muffin removes cleanly.

  1. This is the kind of health food my guys would definitely get behind! I'll have to add wheat germ to the pickup list.

    1. The original recipe called for Wheat Bran but I couldn't find any so I used 1/2 cup of Wheat Germ and added a 1/2 cup more of flour.
